“Good for omlets.” This egg mix tasted better than I expected. It is difficult to make scrambled eggs with as the mixture even when watered down alot tends to rise a little like a pancake. Fortunately this is IDEAL for making omlets and fritattas. The resulting cooked egg tastes great without tasting too "eggy" and is light and fluffy. Not exactly the same texture as fresh egg, but good enough. This mixture also worked well as egg substitute in pancakes and johnnycake. I found the best way to rehydrate the powdered egg to avoid clumping was to shake it vigorously with water in a small nalgene bottle. -The Turk, Astoria, NY
